Honestly it's pretty simple. Make a tunnel leading to your "curing area". Make a couple of cells that are directly under this tunnel and cover the roof back up with a trap door.

Successfully curing a roaming zombie villager is a matter of preparation. I would dig a small bit, two blocks deep, as a holding area for the zombie villager. At night, lead one over to the pit and jump in. He'll follow you so cure him and then get out. Make sure the pit is lit and cover the top so other zombies don't try to kill the villager.
The mobGriefing rule affects the following: Mobs trampling farmland. Mobs picking up dropped items (zombies, villagers, etc.) Zombies breaking doors. Sheep eating grass (sheep will still regrow their wool, but the block will not change from a grass to a dirt block) Villagers harvesting/replanting farmland.
